Last weekend I popped to Norwich to see some of my lovely girlies for some wine and a gossip under the pretence of Book Club. Turned into a tipsy Disney sing-a-long instead, but that’s another story….
Our lovely hostess had made Blondies; they were totally delicious and I’ve not been able to get them out of my head ALL WEEK. Yep you guessed it, I made some this afternoon ☺️
The recipe is available in The Hummingbird Bakery Cookbook and is a breeeeeeze to make. Makes the kitchen smell amazing too!

Not too bad for a first attempt although I think maybe 5 minutes less in the oven would have helped.
There are so many lovely recipes in that book, it was a brilliant purchase even if I do say so myself.
I did read somewhere online that the blondies work well with gluten free flour, and my friends used walnuts instead of pecans ☺️
